When you start eating really healthy foods and stop eating starchy carbohydrates breakfast can be a difficult time to incorporate your new diet since most breakfast foods are made from grains. A creative way to replace starchy carbohydrate cereals and porridge is to substitute quinoa for grain. Quinoa is a seed that acts like a grain and is the perfect alternative to oats or rice. This Quinoa Porridge makes a quick and delicious breakfast any day of the week.
For this recipe use a small sauce pan to combine 1/2 cup of quinoa flakes with 1 cup of filtered water, 1/2 cup of coconut or almond milk, and 1 small cup of raisins (best if soaked overnight). These cow milk alternatives are usually quite sweet and very nutritious. Cook the quinoa flakes, raisins, and liquids at a simmer for 2-3 minutes over medium heat. Add manuka honey, flaked roasted almonds, and/or chopped apples or nuts to your morning porridge to cater to your favorite flavor. Enjoy before a busy day at work or on a peaceful morning with a friend.
